Sugar, extract or enhancer?

The tin gives you malt; what you add alongside it decides the rest. Plain white sugar is the cheapest option and the worst one — it ferments out completely, contributing alcohol and nothing else, which is where thin, cidery kit beer comes from.

Dextrose is a cleaner sugar than sucrose but behaves the same way: fully fermentable, no residue. Maltodextrin is the opposite — yeast cannot ferment it at all, so every gram stays in the finished beer as body and mouthfeel without adding a point of alcohol.

The numbered enhancer blends are those two combined in set ratios, sometimes with dry malt extract, and matched to a style. If you want one change that improves a kit beer, swap the kilo of sugar for a blend, or for a kilo of liquid malt extract.

Lactose is a special case. It is a milk sugar, unfermentable by brewing yeast, and it adds genuine sweetness rather than just body — which is what makes a milk stout taste the way it does. It is not vegan, and it is not suitable if anyone drinking it is lactose intolerant.
