Picking a cider yeast

The yeast decides how dry a cider finishes and how much apple character survives fermentation. It is the single cheapest change you can make to a kit cider.

SafCider AB-1 and Mangrove Jack's M02 are both purpose-built cider strains — they ferment further than a generic ale yeast and preserve fresh fruit aroma rather than stripping it. The wine and mead strains suit bigger, higher-alcohol batches.

Nutrient timing matters. Adding it in stages during fermentation, rather than all at pitch, keeps the yeast healthy through to the end and avoids the stalled, half-dry finish that makes a cider taste cloying.
