Pitching rates for high-gravity worts

Underpitching is the most common reason a big beer tastes worse than the recipe promised. It rarely announces itself as a stuck ferment. More often you get a beer that finishes a few points high, tastes hot and solventy, throws more banana or pear than you wanted, and takes months to settle down — if it ever does.

How many cells you actually need

The standard figures brewers work to are:

  • Ales — around 0.75 million cells per millilitre, per degree Plato.
  • Lagers — roughly double that, around 1.5 million.

Degrees Plato are close enough to gravity points divided by four. So a 1.048 pale ale is about 12 °P, and a 1.070 barleywine or double IPA is around 17 °P.

Run the numbers for 23 litres:

  • 1.048 ale — 23,000 mL × 12 °P × 0.75 = about 207 billion cells.
  • 1.070 ale — 23,000 mL × 17 °P × 0.75 = about 293 billion cells.

A fresh 11.5 g sachet of dry yeast contains roughly 200 billion viable cells. So one sachet is about right for a standard-strength ale, and roughly two-thirds of what a 1.070 wort needs. At 1.090 you are at half.

The simplest answer is usually two sachets

Home brewers overthink this. For dry yeast, the cheapest and most reliable fix for a big beer is to pitch a second sachet. Two sachets get you around 400 billion cells, which comfortably covers anything up to about 1.080 in a 23 litre batch.

Dry yeast is inexpensive, it is packaged with a known cell count, and it does not require you to keep a stir plate and a flask clean. A starter made carelessly is worse than no starter at all — you are propagating whatever else got in.

Starters make sense for liquid yeast, where a single vial or pack holds around 100 billion cells and is often past its best. There, stepping it up genuinely doubles or triples what you have.

Rehydration is worth the ten minutes

Sprinkling dry yeast straight onto wort works, but you lose viable cells doing it — the osmotic shock of hitting sugary wort kills a proportion of them outright. Rehydrating in plain water at around 30 °C for fifteen minutes before pitching preserves noticeably more.

If you rehydrate, do not let the slurry sit around, and do not shock it with a big temperature drop going into the wort. Get it within a few degrees of your wort temperature before pitching.

A rehydration nutrient with sterols and unsaturated fatty acids gives the yeast the building blocks it needs for the first budding cycle. It matters more in high-gravity worts, where the yeast has less oxygen available relative to the work in front of it.

Oxygen matters more as gravity climbs

Yeast needs oxygen at the start to build cell membranes before it switches to fermentation. In a standard-strength wort, splashing during transfer and a vigorous shake of the sealed fermenter gets you most of the way.

At 1.070 and above, that is usually not enough. The wort is more viscous, holds less dissolved oxygen, and the yeast has more growth to do. Shake it longer than feels reasonable — a solid two minutes — or use pure oxygen and a stone if you have one.

What underpitching tastes like

Three weeks later, you are looking for:

  • Heat. A boozy, solvent edge that reads as hotter than the ABV should be. Those are fusel alcohols, produced when stressed yeast grows too hard.
  • Too much fruit. Banana, pear drop or nail-polish esters well beyond what the strain normally gives.
  • A high finish. The beer stops several points above target because the yeast ran out of healthy cells before it ran out of sugar.
  • Butter. Diacetyl that never fully cleans up, because there were not enough cells left at the end to reabsorb it.

None of these are fixable afterwards. They are decided in the first twelve hours.

The short version

Up to about 1.055, one fresh sachet is fine. From 1.060 to 1.080, pitch two. Above that, pitch two and consider a starter or a healthy slurry from a previous batch. Rehydrate, give it nutrient, oxygenate harder than you think you need to, and keep the temperature under control for the first three days.

Nothing on that list is expensive. All of it is cheaper than pouring out twenty-three litres of hot, over-fruity beer you waited two months for.
